| Use | Application 1) for inhibiting off-flavors in oral compositions such as foods, beverages and medicines, and also relates to oral and pharmaceutical compositions comprising off-flavor compounds, the malodour is inhibited by the addition of phosphorylated amino acids such as phosphotyrosine, phosphoserine, phospho-threonine and mixtures thereof to the oral and pharmaceutical compositions. 2) preparation of a class of compounds comprising the peptide sequence (X-Y-Z)n, wherein X is an amino acid selected from aspartic acid, glutamic acid, asparagine, alanine and glutamine, Y and Z are selected from alanine, amino acids of serine, threonine, phosphoserine, phosphothreonine and their derivatives. These compounds have the property of specifically binding tightly to calcified surfaces, making them suitable for a variety of applications including remineralizing tooth and bone surfaces, diagnosing bone and tooth defects, treatment of bone and tooth defects and in vitro and in vivo analysis of the presence and location of calcified deposits, and for industrial, synthetic, medical, dental and research uses requiring the determination, localization or treatment of calcifications. |
